Paleo challengeIf you think taking a trip is an excuse for excess, I can tell you, Paleo is alive and well on the road!

It’s been 11 days since Herb and I left for our trip to the Northwest and we made a commitment to stick to our new eating plan despite the fact that we were on vacation.   And for the most part, (our sins involved the adult beverage kind of cheating), our Paleo lifestyle has survived and we’ve managed to stay on track 80/20 percent of the time!

We’ve seen some wild life, and eaten some too.  Don’t forget, buffalo meat is one of the leanest cuts of protein you can eat!   That’s right, grass fed bison is has 3.5 times less fat than beef, is lower in cholesterol than beef, and contains less calories than beef.

Buffalo meat also has more iron and vitamin B-12 content and 35% more protein than beef.  So spend a little more money on bison at Consentino’s Brookside Market or Whole Foods and really get a healthy bang for your protein buck!

Check out this video from one of our hikes inParadise Valley, Montana.  Home of movie stars (Dennis Quaid and Jeff Bridges are frequenters of Chico Hot Springs where we stayed), Grand Vistas, and awe inspiring Hospitality, we feel we lost our hearts in Big Sky Country!  We got a great tip from our friends Tamara, Dennis and Todd (who, by the way, have an awesome cabin to rent), about this hike to Pine Creek (pronounced Crik) Lake.   It was a grunt- over 3500 feet elevation and over 10 miles long but we did it!  And the payoff was great!

Keep in mind, I hadn’t seen make up or a hair dresser in 9 days when this video was shot….

You really can eat Paleo on the road and love it!  Be well y’all!
