Fast Paleo is one of my favorite apps and recipe sharing sites. Just to give you a “taste” of what you can expect, here’s a sampling of simple, fast recipes.

Coconut Crusted Bacon Wrapped Chicken Tenders
Cooking Time: 15-25 min Serves: 3
Ingredients and Cooking Steps
- 6-8 Large Organic Chicken Tenders
- 6-8 Bacon Slices
- 4 Tbsp. Coconut Oil
- ½ cup shredded coconut and 2 Tbsp. coconut flour
- salt and pepper
- paprika and garlic powder
- 2 Tbsp. Parsley
1.) Prepare the coconut coating: in a large bowl (I used a square pictured here), add coconut shreds, flour, and spices. Mix around with fork or hands.
2.) Prepare the chicken: In this particular recipe I prepared the chicken 3 different ways:
a.) Large tender with one bacon strip
b.) Medium tender (cut from large) with about 1/3 bacon strip, toothpick to hold (2-3 pieces from one large tender)
c.) Small bite-size tender (cut from large) with about ¼ bacon strip, skewer to hold with 4 pieces (one large tender.
You can do what I did or choose ONE of the above, or do your own thing, but the spice/coating combination is perfect!
Prepare the chicken raw and bacon raw, before coating. Lay the bacon strip on a cutting board to measure the size of your tender IF you decided to cut them, if not just wrap the big tenders. Cut bacon and wrap, secure with toothpick or skewer.
3.) Heat skillet to medium heat, add coconut oil. Allow to heat!
4.) Dip the large tenders, coat evenly by flipping or coating with hands, be gently with wrapped tenders as the bacon can come undone! Repeat with the various sizes of tender combinations, coating every nook and cranny with coconut and spices.
5.) Add each tender to oil, one at a time, let cook for about 3 minutes, flip tender cook for 3 and repeat about 3 times. If you have a cover, cover the bacon wrapped tenders for ONE of the round of 3 for a completely cooked chicken tender. Add more parsley towards end for taste and garnish.
6.) Remove, allow to cool and enjoy!

Saag (Kale) Paneer

Cooking Time: 10 mins Serves: 2
Ingredients and Cooking Steps
- 1 cup paneer, cut into cubes
- 1 large bunch kale or 4 cups chopped kale
- 3 tbsps butter, ghee or coconut oil
- 1/4 large, white onion, finely chopped
- 3 cloves garlic, minced
- 2 tsps fresh ginger, grated
- 1/4 tsp turmeric
- 1/4 tsp cumin
- 1/2 tsp cardamon
- 1/4 cup heavy cream (or sub coconut cream for non-dairy option)
Heat 1 tbsp of butter in a pan. When hot, add the paneer and fry for a few minutes until they brown. Remove from pan and set aside.
Add two more tbsps of butter to the same pan followed by the onion, garlic, ginger and spices. Saute for 4 minutes ’til the onion softens. Add the kale. Depending on how large your pan is, you might need to do this in batches. That’s fine. Just keep sauteing until the kale wilts. It should take about five minutes for all the kale to wilt and soften. When this happens, add the paneer cubes, stir for a few minutes more then take the pan off the heat and stir in the cream. Serve immediately.

Clams in Garlic and Herb Broth

Cooking Time: 10 minutes Serves: 2
Ingredients and Cooking Steps
- 4 tablespoons butter (pastured)
- 1/4 teaspoon crushed red pepper flakes (or to taste)
- 1 cup white wine (Sauvignon Blanc is good)
- 2.5 to 3 pounds littleneck clams
- 2-3 tablespoons fresh oregano, chopped
- handful of fresh parsley, chopped
- juice from 1 lemon
- freshly ground black pepper
- 1/4 cup heavy cream or coconut milk
Before cooking the clams, keep them on ice, outside of a plastic bag (they need to breathe). I put a shallow tray of ice in the sink and left the clams on top of that until I was ready to cook. You can also put them in a colander placed in a bowl of ice in the refrigerator, if storing longer. Just before cooking, scrub the shells with a brush under cold, running water.
In a large saute pan, melt the butter over medium high heat. Add the garlic and shallot; cook until fragrant, without browning (1-2 minutes). Sprinkle in desired amount of crushed pepper flakes and add wine. Bring to a boil and add the clams and oregano. Cover and simmer for 5-8 minutes until clams have opened up, shaking the pan occasionally.
As the clams open, carefully take them out and set aside in a bowl. Discard any clams that have not opened after about 8 minutes.
Continue to simmer the broth until it has reduced some in volume (how much broth you would like with your clams is up to you). Squeeze in the lemon juice and stir in the parsley. Season with a few grindings of black pepper. Taste to see if salt is needed (probably not, because clams are salty!) Add a touch of heavy cream or coconut milk to the broth, if you’d like. Return the clams to the pan to reheat.
Serve the clams in a bowl with the broth, like a stew – – or they would be excellent served over zucchini noodles.
[Recipe can be adapted to be dairy free by using olive oil instead of butter, and coconut milk instead of cream.]

Primal Lasagna

Cooking Time: 45 Serves: 5
Ingredients and Cooking Steps
- 2 lbs grass fed ground beef
- 1 27 oz can of crushed tomatoes
- 1 27 oz can of diced tomatoes
- 8 cremini mushrooms
- 1 onion, 2 carrots
- 5 cloves garlic
- dried basil, oregano, marjoram to taste
- 1 TBSP paprika, 1/2 tsp organic turmeric
- 2-3 large Zucchini for noodles, 5-6 leaves fresh basil
- 1.5-2 whole tomatoes, sliced thinly, 1/4 cup finely grated pasture raised hard cheese (optional)
Begin browning your meat in a large saucepan while you dice your onion and carrot. Add to the meat and simmer slowly. Once it’s almost all brown, add your garlic and spices and let cook for about 15 minutes on low heat, stirring often. Chop your mushrooms up to bite sized pieces and add to the pan. Cook with the lid on for about 5 minutes then take the lid off and simmer for about 10 minutes or so. This cooks off a lot of the juices that are released from the mushroom. We’re not using oven ready noodles here folks so we want to eliminate as much water from the sauce as we can.
Open your crushed tomatoes and drain as much of the water as possible. Add it to the meat and simmer for a while, then add the sauce. It’s best to let this stuff simmer on low for a long while, occasionally taking the lid off the pan to release water.
Lasagna Layers:
You’re going to use zucchini for the ‘noodles’. If are able to, cut your zucchini noodles just as you begin browning the meat. If they are allowed to dry for a few hours, they release less water into the final dish. I cut mine about 1/8 inch thick. Too thin and they don’t hold the dish together, too thick and it doesn’t jive. Find your zucchini sweet spot and go with it.
Once the meat sauce is ready, ladle out about 1 cup or so into the bottom of your baking dish. Place a layer of zucchini on top of that, then take half of what’s left of the meat sauce and spoon over the ‘noodles’. Here is where you can add a light sprinkling of pastured cheese, as well as a few fresh basil leaves ripped into pieces. Add another layer of zucchini and the rest of the meat sauce.
Top with a layer of finely sliced whole tomato and a generous amount of ripped basil leaves. Sprinkle your pastured cheese on top. Bake in the oven at 375 for about an hour (gotta cook those zucchini’s). If your meat sauce is piping hot when you layer, it may take only 45 minutes. Either way, turn the oven to broil for the last 10-15 min of cooking and then let it set on the counter for about 20 minutes before serving.
